What you need
- 500 g fresh Burgos-style cheese
- 4 eggs
- 150 g sugar
- 100 g honey
- 100 g flour
- 200 ml whole milk
- Zest of 1 lemon
- 1 teaspoon ground cinnamon
- Butter to grease the mould
Preparation
Step by step

Preheat oven to 180 °C. Grease a rectangular mould with butter.

Blend the fresh cheese with the milk until smooth.

Beat the eggs with sugar and honey until pale.

Add the blended cheese, lemon zest and cinnamon. Mix well.

Fold in sifted flour gradually to avoid lumps.

Pour into the mould and bake 40 minutes at 180 °C, until the surface is golden and a skewer comes out clean.

Cool before unmoulding. Serve at room temperature, optionally with a drizzle of extra honey.
