
Bread cake (zero-waste)
Zero-waste recipe from the Atienza book: stale bread turned into a sweet cake with milk, egg, sugar and cinnamon.

What you need
- 300 g day-old stale bread
- 750 ml whole milk
- 4 eggs
- 150 g sugar
- 1 teaspoon ground cinnamon
- Zest of 1 lemon
- 100 g raisins (optional)
- Liquid caramel (for the mould)
Step by step
- 01
Cut the bread into small pieces and put in a large bowl.

Heat the milk with lemon zest without boiling. Pour over the bread and let it soak at least 20 minutes. Mash with a fork to a homogeneous paste.

Beat the eggs with sugar and cinnamon. Add to the bread mixture along with raisins if using.

Preheat oven to 180 °C. Cover the bottom of a rectangular mould with liquid caramel.

Pour the mixture into the mould and smooth.

Bake at 180 °C for about 45 minutes in a water bath. Done when a skewer comes out clean.

Cool completely before unmoulding (at least 4 hours in the fridge). Serve cold.
- The better the bread (hogaza, not sliced), the better the texture.
- Variant: add chunks of apple or pear with the raisins.
