Ingredients

What you need

  • 300 g day-old stale bread
  • 750 ml whole milk
  • 4 eggs
  • 150 g sugar
  • 1 teaspoon ground cinnamon
  • Zest of 1 lemon
  • 100 g raisins (optional)
  • Liquid caramel (for the mould)
Preparation

Step by step

  1. 01

Cut the bread into small pieces and put in a large bowl.

  2. 02

Heat the milk with lemon zest without boiling. Pour over the bread and let it soak at least 20 minutes. Mash with a fork to a homogeneous paste.

  3. 03

Beat the eggs with sugar and cinnamon. Add to the bread mixture along with raisins if using.

  4. 04

Preheat oven to 180 °C. Cover the bottom of a rectangular mould with liquid caramel.

  5. 05

Pour the mixture into the mould and smooth.

  6. 06

Bake at 180 °C for about 45 minutes in a water bath. Done when a skewer comes out clean.

  7. 07

Cool completely before unmoulding (at least 4 hours in the fridge). Serve cold.

Recipe tips
  • The better the bread (hogaza, not sliced), the better the texture.
  • Variant: add chunks of apple or pear with the raisins.
